I am always looking for new FODMAP dinner recipes that are delicious, healthy and also make for great lunch time leftovers. Is that too much to ask for?! I am all about sneaking in vegetables into just about anything, smoothies, pesto, and muffins anyone? Not only can it be challenging to get the recommended 3 servings of vegetables a day into your diet but I tend to lean towards fruit and sugar more often. I was eating fruit for every meal and snack instead of being more well rounded with proteins and vegetables. Now that I’m aware, I try to add vegetables anywhere I can. I love this article from Greatist which gives 40 tips for how to sneak more vegetables into your diet without sacrificing flavor.

Description
An easy to make turkey meatball recipe with vegetables snuck in!
Ingredients
1 lb ground turkey
1/2 cup Gluten-Free Bread Crumbs (garlic and onion free)
1 tsp dried oregano
2 tbsp green onions, diced
1 tsp sea salt
1/4 cup zucchini, diced
1/4 cup carrots, diced
1 egg
2 tbsp Extra Virgin Olive Oil
3/4 cup chicken or vegetable broth (garlic and onion free)
1 package of Gluten-Free Pasta
Instructions
- In a large bowl, combine together all of the ingredients (except the oil and broth).
- Heat a large pan on medium heat with olive oil.
- While oil is heating, roll ground meat 2-inch balls and add to the heated pan.
- Brown all sides of meatballs for 7 minutes.
- While meatballs are cooking, boil water and follow instructions for preparing gluten-free pasta.
- Add 1/2 cup broth and lower heat to medium-low and cover for an additional 7 minutes.
- Remove lid and add remaining broth and continue cooking uncovered until fully cooked.
