Turkey Meatballs with Spaghetti

FODMAP dinner recipes - Turkey meatballs and spaghetti

I am always looking for new FODMAP dinner recipes that are delicious, healthy and also make for great lunch time leftovers.  Is that too much to ask for?!  I am all about sneaking in vegetables into just about anything, smoothies, pesto, and muffins anyone?  Not only can it be challenging to get the recommended 3 servings of vegetables a day into your diet but I tend to lean towards fruit and sugar more often.  I was eating fruit for every meal and snack instead of being more well rounded with proteins and vegetables.  Now that I’m aware, I try to add vegetables anywhere I can.  I love this article from Greatist which gives 40 tips for how to sneak more vegetables into your diet without sacrificing flavor.

I’m a big fan of ground turkey as I no longer eat red meat and there are so many versatile dishes you can make with it.  What are some of your favorites?
