Five- Ingredient Low FODMAP pasta sauce

I’m still in denial that my favorite neighborhood restaurant spot, Dolce Vita, has closed this summer. I have so many great memories from dating my now husband, double dates, family get together and the nervously celebrated dinner the night before having my baby and the first dinner spot after having a baby. The week of their closing, I made my husband pick up to go orders at least twice. The dish I get is the most simple: gluten-free corn based pasta with a basil tomato sauce sans garlic and dairy. If I’m feeling crazy, I would sometimes add shrimp. One of the reasons I love this restaurant so much is that they were so accommodating to my food allergies. I wish more restaurants were as helpful and understanding but hopefully times are changing and eating out will become easier and easier. In honor of my favorite restaurant, I made this super easy and delicious FODMAP safe pasta recipe. Have you been to a restaurant where you run home and want to try and recreate it? I do it all the time, I think I get most of my inspiration from this!

This easy to make low FODMAP pasta sauce lasts for about a week in the fridge and would be delicious on top of salmon, grilled chicken, or even vegetables. What’s better than a recipe that is multi-purpose?! I’m all about making what I prepare stretch as much as possible to use over and over. This would also do well to freeze extra and use later.

Description

This easy to make FODMAP safe pasta sauce is packed with flavor!


Ingredients

Scale
  • 2 medium tomatoes, roughly chopped
  • 1 tbsp non-oil packed sun-dried tomatoes 
  • 2 tbsp tomato paste
  • 1/2 cup fresh basil leaves
  • 1/3 cup extra virgin olive oil
  • 1/2 tsp sea salt & ground pepper

Instructions

  1. Using a food processor or blender, add all of the ingredients until fully blended.
  2. Serve over hot pasta

Notes

This will stay fresh in a closed container in the refrigerator for up to a week.  Enjoy!
