Weeknight meals are all about putting together a nutritious and easy dinner that doesn’t take too much time or effort.  This is one of my requirements when I’m thinking about FODMAP dinner recipes.  The best part for me is thinking about the next day and what I can have as leftovers for lunch.  I will purposely make more than enough to have for lunch and even an extra dinner meal for the next day.  Life is hectic enough with trying to cook every single night.  Am I right?

I have found meal planning on Sunday morning has really helped the weeknight stress of meals.  I recently started using Instacart which is a grocery delivery service.  At first it felt like a huge splurge which don’t get me wrong it is not a necessity BUT I actually end up spending less because you aren’t able to impulse buy.  It also forces you to be extremely organized to make sure you have the required groceries needed for the week.

A satisfying FODMAP safe dinner recipe to make any night of the week!

Instructions

  1. Preheat oven to 400 degrees.
  2. In a large bowl Gently mix in all of the meatball ingredients (excluding the pasta of course) and form into roughly 1 inch round balls.
  3. Place the meatballs on a parchment lined baking sheet and bake for 18-20 minutes or until no longer pink in the middle.
  4. While the meatballs are baking, cook the pasta according to the box instructions.

Notes

Feel free to use leftover pesto for the pasta.
