Sauteed Green Beans & Burst Tomatoes

FODMAP vegetables - Sautéed Green Beans & Burst Tomatoes

I have been so into green beans lately as it’s easy to prepare, cook and get on the table in no time at all. I used to HATE green beans but that was only because I grew up on the canned slimy green beans. Just thinking about canned green beans can turn my stomach inside out. I have never been able to understand the Thanksgiving green bean casserole crazy, let alone be able to make one. FODMAP vegetables can seem limited but there really are some great options like green beans, eggplant, carrots, cucumbers, lettuce to name a few. Tomatoes which are technically a fruit (I really can’t get on board with this but I’ll follow the rules) are also FODMAP safe and depending on the type of tomato will depend on the portion amount. For this recipe, I use cherry tomatoes and a low FODMAP serving is 5 cherries. You can eat up to 16 cherries and be moderate FODMAP safe due to the Fructan.

Here are some of my favorite green bean health benefits:

  • Heart healthy <3
  • Contain protein
  • Great for pregnant women to consume as they are high in Folate
  • Good source of vitamins & minerals including vitamin C, vitamin A, calcium, magnesium, and potassium
