I am always trying to sneak in vegetables into our meals, especially because my husband puts up a fight whenever I put greens on his plate. I’m talking about my husband not a toddler, scary right?! 😉 This pesto is not only garlic and dairy free but also has zucchini hidden in it. This pesto is delicious over a big bowl of pasta or even as a marinade for fish or chicken. There are a whole list of FODMAP dinner recipes that can be used with this pesto. Some of my favorites are pesto turkey burgers and pesto baked salmon.
Zucchini is packed with nutritional benefits and is a great FODMAP vegetable option but remember to stick to 1/2 cup serving size in order to stay compliant.

An easy pesto recipe with vegetables snuck in!
Ingredients
1 large zucchini, cut into large chunks
1 cup fresh basil
1 tbsp nutritional yeast
1/2 tsp kosher salt
5 tbsp extra virgin olive oil
1/2 lemon, juiced
Instructions
- Combine all of the ingredients in a food processor and blend until fully incorporated.
Notes
Serve with your favorite gluten-free pasta.
