Zucchini & Basil Pesto

FODMAP dinner recipes - Zucchini & basil pesto

I am always trying to sneak in vegetables into our meals, especially because my husband puts up a fight whenever I put greens on his plate.  I’m talking about my husband not a toddler, scary right?! 😉  This pesto is not only garlic and dairy free but also has zucchini hidden in it.  This pesto is delicious over a big bowl of pasta or even as a marinade for fish or chicken.  There are a whole list of FODMAP dinner recipes that can be used with this pesto.  Some of my favorites are pesto turkey burgers and pesto baked salmon.

Zucchini is packed with nutritional benefits and is a great FODMAP vegetable option but remember to stick to 1/2 cup serving size in order to stay compliant.

Some of my Favorite Health Benefits of Eating Zucchini:

High source of antioxidants and Vitamin C

Can help improve heart health

Help improve digestion due to hydration, electrolyte & nutrients

Good source of energizing B Vitamins
