How delicious are candied nuts? I can seriously eat them by the bag full before I even notice the dent I made into them (and soon to be stomachache). For this exact reason, I came up with a healthified version that exchanges the white sugar and butter with maple syrup, vanilla extract, and cinnamon. I promise you will be hooked on this lighter version and won’t have to feel as guilty when the bag is empty. :0 These are delicious to eat alone or add on top of FODMAP diet desserts like this chunky monkey ice cream or this pumpkin pie recipe!
I love giving homemade gifts during the holidays. It’s a more personal way to show your family and friends how much you love them. These are delicious over waffles, yogurt or ice cream!
- In a medium-size saucepan, add pecans and roast for 2 minutes over medium-low heat. Mixing frequently in order for pecans not to burn.
- Add maple syrup & cinnamon and continue stirring for an additional 5 minutes.
- Remove from heat and add vanilla extract. Cool to room temperature before serving. Store in airtight container.
