Zucchini Zoodles (Noodles) & Homemade Simple Tomato Sauce

If you haven’t heard of zoodles (zucchini noodles) you are really missing out!  I love the taste and texture sometimes even more than real pasta.  These can be eaten raw or a quick stir fry depending on your preference.  They make for a quick FODMAP dinner with very little prep work!

I am obsessed with my spiralizer as there is SO much you can do with it.  I know I’m not using it to its utmost potential but my goal for 2017 is to really experiment with different fruits and vegetables.  This Buzzfeed article lists off 25 awesome recipes using this cool gadget that has really inspired me to venture out.  What are some of your favorite spiralizer recipes?

I have noticed the last few months that grocery stores now have a section of already spiralized vegetables like zucchini, beets and sweet potatoes but it’s SO much more expensive.  Just after a few uses, this handy gadget pays for itself.  Plus maybe it’s just in my head but I can’t imagine the packaged version being as fresh as if you spiralized yourself.

Zucchini Zoodles (Noodles) & Homemade Simple Tomato Sauce

Description

A homemade pasta sauce without garlic and onion.


Ingredients

Scale
  • Zucchini (1 per serving)
  • 1 Teaspoon Extra Virgin Olive Oil
  • Tomato Sauce (4 serving)
  • 5 Medium Tomatoes, chopped
  • 1/4 Cup Sun Dried Tomatoes
  • 4 Tablespoons Tomato Paste
  • 1 Cup Loosely Packed Basil
  • 1/3 Cup Extra Virgin Olive Oil
  • Salt & Pepper to taste

Instructions

  1. Follow instructions of spiralizer to turn zucchini into noodles.
  2. In a large skillet on medium-high heat, add olive oil. Sauce noodles in pan for 1-2 minutes.
  3. Add all of the tomato sauce ingredients to a food processor and blend well. If needed, add more salt to taste.
  4. This sauce can be kept in a refrigerator for a few days.
