Stuffed Tomatoes

A delicious and easy tomato side dish recipe!


  • 2 tomatoes, cored and center scooped out
  • 1 tbsp unsalted butter
  • 1/4 cup gluten-free bread crumbs
  • 1/2 cup of fresh herbs (I used parsley, basil & sage)
  • 1 tbsp green onions, diced
  • 1/4 cup FODMAP safe mozzarella cheese
  • Salt and pepper, to taste
  • Nonstick cooking spray


  1. Preheat the oven to 375 degrees.
  2. In a small skillet, heat the butter on medium heat.  Add the remaining stuffing ingredients and saute for 2-3 minutes.
  3. Scoop the stuffing evenly into the tomatoes.
  4. Spray a small baking dish with nonstick cooking spray and place the stuffed tomatoes.
  5. Bake for 25 minutes or until golden brown.
