A light salad made with few ingredients and full of flavor!


  • 1 cup English cucumber, loosely chopped
  • 1 cup tomatoes, loosely chopped
  • 1/4 cup assortment of fresh, chopped herbs (basil, mint, parsley are recommended)
  • salt & pepper, to taste
  • 2 TBSP extra virgin olive oil


  1. In a large bowl, mix all of the ingredients together.  Serve cold or at room temperature.
